Leftover chicken, although I don't use boxed mac and cheese, either. It's macaroni, a can of condensed cheese soup, eggs, milk, shredded cheddar... ummm... pepper... and I add chicken and pre-cooked veggies before I bake it.

Eggs, bacon and ham. Or maybe eggs, milk, onions, cheese and bacon done quiche style - minus the ham.

Thanks! This sounds delicious.

I'm making Rotisserie Chicken in the crockpot with potatoes and a veggie (not sure what) tonight. I'm thinking you mac and cheese would be a good use of the leftover chicken.

In that case, let me give you the actual recipe. Although it's somewhat flexible in some items.

2 cups macaroni, uncooked
1 can condensed cheddar cheese soup
2 eggs
1 soup can milk
1 lb shredded cheddar (or less)
1.5-2 cups vegetables (I use frozen peas, carrots, and corn)
about 2 cups chicken in bite sized pieces
pepper to taste (I do about 1 tsp)

Cook macaroni as usual. At least partly cook the vegetables; I cook them all the way. Mix cheese soup, eggs, milk, pepper, and about 2/3 of the cheese in a large casserole dish. (I think mine is a 2 1/2 quart). Mix in the veggies, chicken, and macaroni. Top with remaining cheese.

Cover and bake at 350 for about 45 minutes to an hour, removing lid for the last 10-15 minutes of baking.

I'll probably have my normal easy Sunday night dinner. Boiled egg on corn crackers. Maybe some tomato on it too.

I browned some pork chops. Then cooked wild and brown rice. Put the rice in a baking dish with the pork chops on top and added some creamy vegetable soup I'd made and baked it. Turned out yummy. It reminded me of something my mom used to make but without all the fat and calories because she used a canned soup. Also had broccoli.

Now we'll have some great leftovers as well.
