Okay this is what I found:
Jars are too full
Product on rim of jar
Processing temperture or pressure too high
Jars processed too long

Another thought I just had was, do you use an electric or gas stove? My mil has electric. I'm thinking the temperature fluctuates less with electric because gas is harder to adjust.

Thanks, I'll have to try these. I don't know that I've ever been concerned about getting them off the stove soon enough.

No crock involved. It's really quick and easy.

Does anyone have any pear recipes? I found two online but wanted some that were "tried and true." Basically I'm looking for pear preserves but am open to other pear recipes.

I usually just can pears in a light syrup like I can peaches. We love to eat them that way. A couple of years ago I had a ton of pears so I did a few extra things too.

Pear Butter

6 to 7 lbs pears
4 cups sugar
1 tsp grated orange peel
1/2 tsp nutmeg
1/3 cup orange juice

Wash pears. Core, peel and slice pears. Combine pears and 1/2 cup water in large saucepan. Simmer until pears are soft. Puree, being careful not to liquefy (should be 2 quarts pear pulp). Combine pulp and sugar in large saucepot, stirring until sugar disolves. Add remaining ingredients. Coook until thick enough to round up on a spoon. Ladle hot butter into hot jars, leaving 1/4 inch headspace. Remove air bubbles. Process 10 minutes in boiling water canner.

Kristin, you may think me totally ignorant but can you tell me how to can peaches and pears in a light syrup? I think my soon-to-be hubby would like that and I know that I would! He might prefer the preserves but I would prefer the light syrup version.

Well, I like a really light syrup so for about 6 cups of syrup I use 5 1/2 cups water and 1 1/4 cup sugar. For a heavy syrup you can do equal parts sugar and water but that just seems too heavy to me. So, you just put the sugar and water in a saucepan and heat to almost boiling. Then you wash your pears, peel them if you want, and then core and half or quarter them. Treat them with some kind of asorbic or citric acid (I use fruit fresh) to prevent darkening. Then you cook the pears in the hot syrup until they are hot throughout and pack them into hot jars leaving 1/2 inch headspace. Ladle the hot syrup over the pears and make sure to get all the air bubbles out. Process pints for 20 minutes or quarts for 25 minutes in a boiling water canner.

I think this works best with Bartlett pears.

When you can peaches you don't have to cook them in the syrup, just put them right into hot jars and ladle hot syrup over them. I think process time is about the same.

Kristin, thank you so much for the information! I've been wanting to do that but just didn't know how. How do you go about treating the fruit with fruit fresh...is there directions on the container? Would lemon juice work as well?

Yes, there are directions on the fruit fresh container. I think you put a couple of tbs of the fruit fresh in a bowl/sink of water and then put the pears/peaches in there. I've never treated with lemon juice but I assume you could. I just don't know the exact amounts that would be necessary.

HERE is some information about using lemon juice that I just found.

I think home canned peaches and pears are the best thing in the world. There's nothing like opening a can in the middle of the winter...it's just like adding a little summer to a dreary day. I know you can buy canned peaches and pears in the store very cheaply but they just don't taste the same. Plus, home canning peaches/pears is so easy...anyone can do it!

Also, you know what's in your jars...unlike the cans you buy in the store. Wish now I'd known this when our peaches were at their peak!

I defninitely like the not adding salt. Any clue as to why my jars invariably spill over into the canning pot? I've tried more headspace, less headspace, I tighten the lids. They still seal but I've wasted juice and the jars have quite a headspace of air. (my sil would definitely scorn if she ever saw them) This has happened no matter what canning method I use. I'm self-taught on most things I do so I could be missing something.

The only time I've had this problem is when I've used my canner lid and actually pressure canned something. I was told the reason is that I'm using too high of a pressure. Sometimes I have a hard time keeping the pressure at just the right pressure.

I'm no pro but that's what I was told....Looks like this was answered already.

It sure is nice to see a cannign thread! I've been making blackberry jam although I had a batch of blackberries go bad waiting to be processed. I hate it when that happens. I ran into two busy days and by the time I got to them they had molded.

You newbies to canning really should get a Ball Blue book or a similar canning book. These are terrific for learning to can! Another thing is to watch out for small town cookbooks. They often have those great tried and true old recipes that everyone loves.

A few weeks ago, dh was driving down a backroad and in the middle of nowhere there were a few stacks of canning jars. He stopped and loaded them up and brought them home. They were dirty. I went through them throwing out a few cracked and chipped ones and recycling a bunch of mayo jars. I think I got about 6 dozen jars and a bag full of canning rings.

I want to can some spicy pickled mixed vegetables(cauliflower, peppers, carrots, etc.). My family would go bananas over somethign like that.

Michelle, what a find! I got all excited over 10 jars I found at a garage sale for 10 cents a piece (a far cry from $8 a dozen!) and the 12 jars a friend gave me that were used. I just love deals like that!!

Church garage sales are great too! My mom's church had one and that's where I found the jars I bought for 10 cents. Also the lady who gave me some jars was there that day and she overheard me say how excited I was to get the jars so cheap. She went home that day, pulled out her old jars and gave them to my mom for me. I wish I had been there early that morning though...there were some canners there that sold pretty quickly.

I found a recipe to can some spicy pickled vegetables. It was a hard search because most all of them have sugar. We don't want sugar in it. I'm going to use my zucchini, onions, asparagus beans and cucumber from my garden. I bought some peppers today so after I look around on forums I'm going to can! It should be fun.

Yes, I love those free deals!!! I've found canning jars at the Good Will and thrift stores. They used to be around 10 cents a jar but it seems like those places are upping their prices lately. I've seen that happening over the last year or two.

I bought my current canner/pressure cooker off our home school loop for $25. My old one I had picked up at a garage sale for $25 also. It finally got to the point where I couldn't open it when I used it so after trying all new seals and parts with no change I had to replace it.

I'm getting married a week from Friday so there's not much time for canning. Hopefully the week after we get married I can make some pear preserves, jam, and/or honey. We'll see if my pears last until then!

Looks like the peaches are finally ready here so I'm planning to pick some up on Friday when I run my errands....unless this baby decides to come before then (I hope). If we have the baby first my mom will help can when she gets here! She's also bringing a bunch of apples from their yard so we can make applesauce.
