Seems like muffins are all I get around to baking anymore! I make them so I have a quick easy breakfast before leaving for work. Otherwise it seems like I bake when I'm having company or Christmas... funny how things change when you have that empty nest! I just don't seem to do it for just me. LOL, probably a good thing since I'd have to eat it all!

I did just get a interesting recipe for apple dumplings made with cresent rolls, 2 sticks of butter, sugar, cinnamon and then a can of Mountain Dew poured over the top. The person I got it from is a very good cook and swears it is delish... I'm making it for a "girls get-together" for tomorrow night, so I'll see then!

I made chocolate cupcakes this week for someone's birthday at dh's work and I made bread last weekend for our company. Lately I've slowed down because my youngest loves bread and can't have it. I don't like to make things he can't have.

Well I must confess I don't do ALL the baking around here! I've enlisted the help of a very eager almost 11 year old for the last couple of years to help! She now does 95% of our cookie baking and loves branching out to try new things like fruit crisps and cheesecakes. In fact her Caramel Apple Cheesecake took first place in the youth division at a local Johnny Appleseed festival not that long ago! But in the last month we've baked practically everything on that list except a pie. We make LOTS of quick breads, yeast breads, cookies, muffins, cupcakes, cakes, brownies and of course the occasional cheesecake. Tonight I think I'll make a loaf or two of zucchini bread. Garsy, when ya'll bake bread, do you use just a loaf pan and the oven, or do you have a special bread maker?

I bake all the time in the fall and winter. I can't help it!!!! LOL! Today I've baked an apple cobbler (Chelle's easy recipe) for the guy who helped me change my tire yesterday, and later this evening I will bake a loaf of cream-cheese-filled pumpkin bread for a get-together tomorrow morning. I might even bake some cornbread to go with dinner . . . . . . from scratch, of course.

I mentioned to my Mom that I was thinking about getting a new bread machine if I could find one cheap (mine died a few years back), and she quickly told me she "loan" me hers, for an indefinite time. She's only used it once or twice, it stays in the back of a cabinet. So I inherited hers, and I've made white bread, Italian herb bread, and challah. I love her machine, it can make a loaf of bread in an hour, start to finish. I made a sour cream poppy seed cake earlier this week, and I bake brownies and cookies regularly. Cobbler s pies not so much, but occasionally.

I had to check the last one, I rarely bake anymore, no time and I'm baked out. When all five children were home but now that we have an empty nest I don't have to. DH makes bread and buns and I make the odd (very rarely)pie. We will eat baking if it's around and neither of us need the extra calories or the fat. Besides that both churches I minister at run on their stomaches, always some kind of goodies around.

This is what I have for bread machines, it's from a book called "Electric Bread", and is similar to a recipe in the book that came with the machine, only in there it's just called "Egg Bread" - 3/4 C water

- 2 T sugar
- 1/4 C butter

- 3/4 t poppy seeds

Add all of wet ingredients, then the dry, then the yeast. If you want to make traditional Challah, don't add the poppy seeds, take it out after the dough cycle onto a floured surface, punch down, divide into three, braid, pinch together the ends, sprinkle the poppy seeds on top, place on a greased cookie sheet and let double in size, then bake at 375 for 20-25 minutes. I've never made bread completely by hand, I always use the dough cycle on the machine. I hope it turns out well for you!

Thanks Sisrev for that recipe! No, I don't have the machine, but who knows there might be some other recipes by hand or I might purchase that bread machine sometime.

The 10 year old baked twice this weekend! Yesterday she made these delicious Ooey0Gooey Pineapple Buns - basically cut up flaky biscuts in a caramel pineapple glaze. YUMMY! Super sweet but yummy! Today we had a minor disaster then a delicious redo! The first batch of Cookies and Cream Cupcakes bombed because she mixed up and used baking soda instead of baking powder. The cupcakes just didn't work out. The second try worked out better and were much more tasty. Blessings, Garsy

Oh goodie, a baking thread! It's gotten chilly now, and I can finally use my wood cookstove oven. We can't use it all during the warm-hot months. Our favorite treat is fruit crescents. I made my first batch of the fall this week. We got lots of apples from the trees, and I have quite a bit of cooked apples in the freezer. I take crescent rolls (they are sweet), and roll each one out as big as I can. Then I put a couple spoons of apple in the middle, sprinkle of sugar and cinnamon and fold them up. Bake. I make icing with melted butter, powered sugar and just a tiny bit of vanilla. I cover the fruit crescents with the icing. They are just so good! We also splurge sometimes and use Cherry pie filling. If I want to make cinnamon rolls, I unroll the whole crescent roll thing, sprinkle cover it with brown sugar and cinnamon, roll it up, bake and then use the icing. Yum! Cindy

Cindy, that sounds so good and easy! I'm going to have to try that. I have a question. I've got a cookie recipe that is pretty good. It's way too sweet though. I want to not use so much sugar or maybe not as much brown sugar (not sure which), but I'm afraid if I take out a dry ingedient it might make it too liquidy....would that happen, or you think it would come out fine if I left out 1/2 cup of sugar (it calls for 1 cup of sugar and 1cup brown sugar)?

I agree Stina, probably that much sugar wouldn't make a difference. You could cut a couple tablespoons of butter or even an egg if you find they're too liquid. I made pumpkin spice cupcakes with cream cheese butterscotch icing. They were quite heavy, but really pretty tasty.

They came out way good with less sugar, and I did just take away a little butter. Funny thing was, the recipe called for 1/2 cup of oatmeal which I thought I had, so I started mixing everything. Come to find out I only had flavored packets of instant oatmeal. So, I used the Banana Cream flavor, and they came out sooooo good!
