THIS looks right, but I have never made it.

When you make it, call me right away so I can come be your taste-tester. I love shrimp and grits, but no one else in my household does, so I order it when we go out if I see it on a menu.

why yes...yes I do...LOL In fact, just had some last week...yummy and it's the only way I actually like grits.

Authentic Charleston Shrimp N Grits

Ingredients:
·1 1/2 pounds medium shrimp, peeled, halved lengthwise, and deveined if you wish
·Juice of 1 lemon
·Tabasco or other hot pepper sauce
·1 1/2 teaspoons salt or more to taste
·1 1/2 cups stone-ground grits, not instant or quick-cooking
·6 thick slices bacon, chopped
·1 small onion, finely chopped
·1/4 cup finely chopped green bell pepper
·1 garlic clove, minced
·1/2 cup thinly sliced scallions
·2 tablespoons unbleached all-purpose flour
·1 cup chicken stock
·1 to 2 tablespoons unsalted butter
·1 cup (about 1/4 pound) grated medium to sharp Cheddar cheese

Preparation
·Combine the shrimp with the lemon juice and a couple of generous splashes of hot pepper sauce. Let sit while you begin the grits and gravy.

·Make the grits in a large heavy saucepan, first bringing 6 cups of water and 1 teaspoon of the salt to a boil. Whisk in the grits a few handfuls at a time. (They will bubble up initially.) When you have added all the grits, reduce the heat to a very low simmer and cook over low heat for 35 to 40 minutes, stirring occasionally at first and more frequently toward the end.

·While the grits simmer, get the gravy under way. Fry the bacon in a medium skillet over medium heat until brown but still limp. Stir in the onion, green pepper, and garlic and continue cooking until the onion and pepper are limp, about 5 minutes. Add the scallions, sprinkle the flour over the mixture, and continue sautéing for 5 minutes longer. Stir in the stock and remaining salt and cook for 5 minutes longer. Remove from the heat while you finish the grits.

·When the grits are thick and creamy, stir in as much of the butter as you wish, followed by the cheese. Add a splash of hot pepper sauce and additional salt if you like. Cover the grits while you finish the gravy.

·Return the gravy to medium heat and stir in the shrimp. Cook until the shrimp are opaque throughout, about 5 minutes. Serve immediately, mounding the grits in large shallow bowls or on plates and covering them with shrimp and gravy.

·Serves: 4 (Unless you are really hungry!).

When I first met my husband, he was stationed at Ft. Bragg and I drove from Walterboro to Fayetteville twice every weekend to pick him up and bring him back. Florence was our favorite place to stop at this huge gas station with a Taco Bell, Subway and Dairy Queen.

We have friends that live up there now.

Seriously? Do they have it? I'd never had the dish here till after I went to Charleston, and then we got a chef in our cafeteria who was originally from SC. And he offered shrimp 'n' grits as a special several times. I still don't think I've found it in any of our local establishments.

Grits? Isn't that how they measure the rough side of sandpaper? Hey! I'm from Joisey. We ain't got no grits-serving restaurants up here.

If Red Lobster serves shrimp-n-grits...it's not here, which may have been a condition in their opening a restaurant here. And as my Bostonian husband found out...the Red Lobsters up north are not an indication of what they are down here.

I worked in the historic district for around 14 years...and loved it. Could never afford to actually live there though

If you ever get over this way...lemme know and we can have dinner or coffee or just hang out at the market.

Uh huh! They got it at McDonald's. Tastes like the stuff my grandmother used to make out of a bottle, White Rose tea concentrate. With lots of sugar.

ETA: and before you get started on the lack of cuisine here, I defy anybody outside of New Jersey to find an edible pizza. I ain't possible.

I just like mah sweet tea

We actually have a few New Yorkers and a guy from Boston who came down here and opened up a NY Deli...best pizza...best subs/hoagies/grinders (whatever...) and superb calzones!

quick anecdote...because these people really did move here directly from NYC, their place took off like crazy and they stayed very busy. We used to call in for take-out all the time. One evening I called in an order for a cheeseburger and he asked what I wanted on it. I told him everything and he asked me to define everything since he was not familiar with what that meant around here.

LOL I listed lettuce, tomatoe, mayo, mustard, ketchup, pickles and told him the more likely people would have to eat their cheeseburger with a fork, the better it was for people in the south!

I got a free burger for making him laugh.

Ugh... are you people neanderthals? Plain ketchup on shrimp? How about cocktail sauce that's heavy on the horseradish?

I don't understand the appeal of grits at all. It's like if oatmeal were made out of sand.

I had dinner w/ some co-workers last weekend @ BB King's Blues Club in Times Square. One of the guys I was with ordered a side of grits, which the waitress said they no longer served. He got the most incredulous look on his face and said, "How do you guys not serve grits, when BB King is somewhere, eating grits right now?"

Well, that must be where good Boston pizza went. For some reason, the better pizza places up here are run by greeks, not italians.

Here is my recipe...

Go to Sizzler and get the all you can eat steak and shrimp and have a wonderful time keeping the waitress and fry cook busy.

Toss out the grits, they are alive.

I am a G.R.I.T.S. (girl raised in the south) but I am not a fan of grits...only with shrimp or fried fish...any other time, no thank you.

And sweet tea can only be perfected by using Luzianne tea bags which are specially formulated to make iced tea, never cloudy and always yummy.

My husband is from Boston (southie) and when we went to visit, the pizza we ate was from a greek restaurant, so iluvatar must be right! LOL
