Anybody have a favorite crockpot/slow cooker recipe to share? I know there are tons on the web but I am looking for the ones that you and your family love. I'll be back later to share "13 Years Wasted Pork".

My basic crockpot roast recipe is really simple:

Get a roast. (Leave it whole for pot roast, cut into chunks for stew)
Get some potatoes, cut into chunks. (We prefer red potatoes or Yukon gold)
Chunk up an onion or two. (We prefer red, but any color works)
Chunk up some carrots.
Chunk up some celery.
Stick it all in the crock pot along with a bay leaf, some garlic powder, and some beef broth or beef stock.
Salt and pepper to taste.
Cook all day.
Enjoy.

My wonderful DH doesn't like mushrooms ... but they certainly could be added. It's really pretty basic, and you really can throw in whatever veggies you want ... I just like potatoes, onions, carrots and celery.

Overnight Crock Pot Oatmeal

1 cup steel cut oats
4 cups water
(if using a slow cooker liner decrease the water to 3 1/2 cups)
1/2 cup half and half or milk
1 cup dried fruit of choice
(apples, raisins, cranberries, apricots etc)
or 1 - fresh apple (chopped)
1/4 cup brown sugar
1 - tbsp butter
1/2 - tsp vanilla extract
2-3 Tablespoons cinnamon sugar

First off find a bowl that will hold four cups of liquid, and fit inside your crock pot with the lid on. Measure out one cup of Steele cut oats. Pour that into the inner bowl. Add the four cups of water, milk or half and half, brown sugar, vanilla, butter and cinnamon sugar. If you would like to add dried fruit or a cut up apple the add it as well. Fill the crock with water to about halfway. Set the inner bowl in the crock and see how high the water rises. Add more water in the crock if necessary. Try to match it so that the water reaches about the same height on the outside of the oats bowl or just below the bowl. Place the lid on your crock pot. Set on low and go to bed. When you get up the next morning your oatmeal should be cooked perfectly in that steamy water bath.

Toppings to add before serving:

Butter, sugar, honey, splenda,
cinnamon, nuts, raisins,
chocolate chips, pancake syrup
or anything else you like!

Thanks, Harvie. The oatmeal sounds yummy. Our beef roast recipe is similar but we add parsnips. My DH doesn't like mushrooms either!

My favorite roast is done in the crockpot and is super simple

Rinse off the meat, pat dry, season with Tony Chachere's seasoning or any "Season-All" type seasoning.
You can also put potatoes, carrots, etc, around the roast before cooking if you'd like.

Sprinkle one packet of Lipton Beefy Onion Soup Mix over and around the roast.

Cover and cook all day--no need to ad water, the roast will provide the moisture.

Makes a tender roast and the most delicious au jus.

Yes, parsnips are the key to a great roast or stew. YUM! Have you tried them, Harvie?

Anybody have one for chicken? Or a chii? I have a chili recipe that I make every winter that works well on the stove, but I am not sure when to add the beans for a crockpot version.

I have a large crock pot and put two chickens in it - breasts facing inward. Cut an onion into quarters, put a section in each chicken, and one in each corner. Add celery or garlic if I have it and feel like it. About an inch or so of water and sprinkle with salt.

I put it on in the evening on high and go to bed. Sweetie gets up and turns it off so it cools. I put it in the fridge. BigBee puts it back in the base when he gets off the bus and then I pull it out to make supper.

Chicken gravy. Chicken and bisquits. Chicken tacos. Soup. We get 3-4 meals out of it.

Since today is Sunday, our dinner was at noon. I had marinated some chicken breasts so I baked those. We also had acorn squash, broccoli, wild rice/brown rice, and a fruit salad/dessert with pear, mango, blueberry and banana topped with a bit of vanilla yogurt and cinnamon/sugar sprinkles.

We had a retired pastor friend share dinner and fellowship.

Tonight we'll have popcorn.

Oops! I thought I was in the dinner thread.

Wow, that is sheltered, Harvie! I'm not sure I'd ever had a parsnip until I was cooking for myself. We didn't raise them growing up. But I'd eaten plenty of turnips. And now I love kohlrabi as well.

Anyway, you should try a parsnip in your next roast or stew. They look like white carrots in case you're not sure what to look for. They really do add a wonderful flavor. . . as does a little cabbage added to beef stew.

And, yah, I'm drooling too. Especially since I made beef short ribs last night as well, had never made them before, and my recipe left much to be desired.

MommaBee, you cook for 5? Depending on the size of the bird in question we'll get 2 dinners plus 1-2 lunches typically from one. But that is just 2 adults and a toddler. I typically roast it and then we either put the leftovers in on a salad, in burritos etc. I want to throw one in the crockpot soon. You do your chickens whole? I got a recipe today for one that calls for cutting up a fryer and using that.

I cook for 4 (unless you count the teenaged boy twice )

1) Pull off the drums and thighs, side dish and veggie
2) Breast from one chicken, chicken tacos
3) 1/2 breast from the other chicken, gravy and taters (use some broth)
4) Boil bones and left over bits, strain and clean, add 1/2 breast and noodles, veggies, rice or whatever for soup.

Sorry, I gave you an extra one. I was thinking one teen boy, one preteen boy and your daughter. Our dark meat is "sacred" around here - Mark loves it, it is the first thing to go and he wants to eat it straight. So night one takes out 1 leg/thigh/wing (Mark and Josh) plus a 1/3 or so of a chicken breast. Dinner 2 is the same which leaves 1 1/3 chicken breasts for tacos/burritos, salads, sandwiches etc. Sometimes we'll get another regular chicken dinner out of it as well, but that depends on how big the chicken was to begin with. I shoot for 4 meals from a 3.5-4lber and usually get it. Speaking of feeding the family, the little man is asking me to get him lunch!

Me too - I had to make chicken tacos last night, and bought two chickens for the pot as well.

I do pork in the crockpot.

Someone on here gave me a granola recipe that I couldn't get to work because my temp was too hot or too cool. Mix oatmeal and such and cover with honey and let it cook.

I guess I mostly cook meat. I have tried soup but it didn't save any time.

Precooked meatballs and premade gravy works great.

Sweetie has a crock pot a work and for dinners he takes in a couple sticks of butter and a BIG can of potatoes. He drains the taters there, dumps them in and puts the butter in and by lunch time they have something to eat.

(Yes, a crock pot at work. I bought one I didn't like after I used it (oblong) and no one needed one so rather than store it, he took it in there)

Crockpot Rotisserie Chicken

* 1 whole fryer
* 5-6 foil balls
* Lawry’s seasoned salt

Rinse chicken and pat dry w/ paper towels. Sprinkle GENEROUSLY (chicken should be brown w/ seasoning), w/ seasoned salt. Place in crockpot on top of several foil balls or foil covered potatoes. Cover and cook on HIGH for 6 hours.

I used Cajun seasoning instead of Lawry's. Just season it like you would a baked chicken. Also since I'm doing South Beach I used sweet potatoes which were really good.

Are the foil balls to keep it from burning?

And, do the taters over cook if they are touching the bottom...

It's to get it up off the bottom so that it's closer to a rotisserie chicken. There are plenty of juices to keep it from burning but then it boils the meat instead of roasts it.

The sweet potatoes were delicious. They were on the smallish to medium size too. I've only made it once because I just found the recipe so I don't know how regular potatoes would do. If they are large enough they should be okay.

I wonder how a mixture of carrots and potatoes would do?
